He has all the telling signs of a pathological liar. The eyes looking away....the fidgeting of the hands all the time....definitely knew more than just having dinner.
It's people like Bill who made sure Jeffery Epstein was eliminated to make sure all the secrets Jeffery had about the others went as far as the grave and that's it.
His face is turned away from the camera, so he's conducting the whole interview with a sideways glance, which is odd, like he doesn't want to face the questions directly. His eyes are darting a lot, which I've seen on video conferencing from people who are talking and looking at something else on the screen at the same time (distracted). The fidgeting is way over the top, even when his baseline is a natural nervous energy.
During his first answer, it's interesting because he immediately tugs at his left ring finger looking for a ring that's no longer there. IIRC, he recently divorced his wife, and it seems this question brought up memories of the wife where he's searching for that ring. I don't know if that means she was a source of strength and comfort he's going to while answering an uncomfortable question, or perhaps she was opposed to his involvement with Epstein and this was ultimately what lead to the divorce. I suspect the latter, and I suspect he's deeply regretful of getting involved with Epstein as well as losing his wife.
It's also interesting to note his wording about the Epstein dinners. "They didn't result in what he purported." Interesting, because Gates doesn't say they were fruitless, just that he didn't get what was advertised. We're left to assume what he did get, and what was actually discussed at those dinners. The Q side of me wants to know what exactly was on the menu, because I suspect the truthful answers to these questions involves a rabbit hole.
In my opinion, he's not a sociopath, as sociopaths have ZERO issue with lying.
Pychopaths, in contrast to sociopaths, prefer to tell the truth. He does not like having to lie about his true intentions. So he grimaces, has nervous laughs, flails his hands up, does the "believe me" with his forehead, looks to the side and looks back at you with furtive glances, stops and starts, etc.

All of it means he's lying.
