You could theoretically quadruple beef production and not move it's environmental impact, as measured in CO2 in the Earth's atmosphere by 1/10 of 1%.
Beef is a good source of protein, low in estrogen when compared to vegan sources of protein, and is mostly raised by small family owned businesses that are passed down from one generation to the next - those are the reasons for the war on beef. Their tactic is to make consuming beef seem like a guilty pleasure and a luxury item, thereby reducing the market availability to "the common man" and in turn driving small businesses off their lands by making their business model unprofitable.
When the hell did champagne become a "luxury" I can run down to the ezmarts and find a bottle of that junk. Drink liquor you make your damn self so you know your getting only the hearts. Major labels use head hearts and tails all mixed in to get higher yields.

Meat companies coming under pressure to curb greenhouse gases
The boss of Europe’s top meat processor said beef will become a luxury like champagne because of the climate impact of producing it.
“Beef is not going to be super climate friendly,” Danish Crown Chief Executive Officer Jais Valeur said in an interview with Danish newspaper Berlingske. “It will be a luxury product that we eat when we want to treat ourselves.”
Valeur said pork would be a more climate-friendly protein. Danish Crown is one of Europe’s largest pork producers, although it is also a player in the beef market.
