Antibodies dissipate with time, so it would probably not be a realistic measure. Those with a healthy immune system will then have memory cells, that will produce the same antibodies again, once a pathogen has been recognized. If antibodies stayed, the blood would be full of them over time.
It is said that those who had the original SARS-CoV 15 years ago, have memory cells that have an 80% probability of recognizing SARS-CoV-2.
