While I'm no expert gardener, I have had many gardens over the years. I would say one of the simplest vegetables to grow is bush beans (green beans). However, if possible I would stagger the planting. I never did that and I ended up with probably hundreds, maybe even a thousand, green beans all ready to pick at the same time. So unless you're canning or want to supply the neighborhood with green beans you might want to figure out a way to stagger them. One plant can probably produce 40 - 50 beans. So 20 would give you 1,000.
Someone mentioned bacon.:) A BLT is probably my favorite sandwich. And you can't make a good BLT without a good tomato. Most of the tomatoes in the stores aren't that great. I've had mixed success with tomatoes but if you can get lucky one plant also produces a lot of tomatoes. And I guess people have been successful growing those in planters/buckets.
