Nutritional and natural foods that for years we hve been told to eat more of, like meat, nuts, and fruit, are being demonized. Processed and high starch foods are--surprise!--coming out as being better for the environment. There's a 2-axis chart in the article placing various foods on the nutritional axis vs. the enviro axis. Roasted potatoes, chips, and rice come out really well in their schema. If you were trying to give someone Type 2 Diabetes, you couldn't pick a better way to do it.
