My mother, who is triple jabbed, has a UTI that will not go away. She is on her 3rd round of antibiotics.

Sorry that your Mom is fighting a UTI. My suggestions based on experience:

Drink lots, and lots of lemon water (squeeze lemon into glass of water)
Try D-Mannose supplement (a type of sugar found in the human body and fruit). It helps flush the bacteria away from the lining of the urinary track.) non-toxic, widely available. Cranberry juice is always good.

Mother...almost 90, loves D-Mannose, only thing she'll use now. Works like a charm. No more frequent trips to dr. for antibiotics. Recommended to her by natural Dr. Jonathan V. Confirm that D-Mannose supplement is effective. I can ward off a full-blown infection by taking it as soon as I notice beginning symptoms. I buy it on Amazon or at the health food store.
