Already do. We ate stuff my great-grandmother canned for a number of years after she died. We would grow a ton of stringbeans one year, can them, and then not have to grow them for 3 or 4 years.

But it doesn't last as long as glass jar canned food because tin cans are lined in bpa that breaks down, so acidic foods should be eaten asap and not long past their expiration date since they speed up the breaking down of the bpa. Home canned foods though can last many years. A skill everyone should start learning now if they haven't already.
