Ask for cash, now what? Cash has serial number, soon as you spend it you'll get arrested
Ask for a vehicle to escape, now what? that vehicle could have tracking, someone could follow you and so on.
Ask for a payment to your bank account, boom, your bank freeze your account.
Obviously you want to get paid without having to show your face, and you want your payment to be untraceable. Bitcoin, Monero and similar are the only things that fulfill those requirements.
