When you checkmate the king it's the end of the game. So yes it comes last.
Pawns are often used to block the other players moves so it's a good strategy to take them out so you can better move around the board.
Bishop rooks and knights come next because there are more of them and harder to control due to the ways they move.
Queen is mid to last because she is hard to rake out cause she can move all over the board so easily. Queen cab move any direction however they want. So you gotta trap her so she doesn't slowly take out your pieces.
King Control the pieces because once you lose him it's game over. So all other pieces goal is to protect the king. Therefore they are controlled.
