Growing up in 70s-80s Miami, I only ever saw Voodoo or Santaria sacrificial rituals using either goats, chickens, or snakes, never any other animals. I only know of a few rituals that involve human sacrifices or offerings of some sort, but thankfully was never exposed to them. It wouldn't surprise me if some rituals call for other animals, though.
