I've heard rumors that it gives you more ability to control the device, and remove system apps that aren't necessarily needed. Hell, who knows what Big Tech could be doing to take your information? Not sure how much it matters, but I have a Galaxy. Don't know if I'm able to shut off the 5G, doesn't seem like it.

Depends on what you want to do. If you want to completely get rid of google and third party tracking and spying you're better off installing a different Android OS. Check out LineageOS as an example.

Root. Lineageos, no gapps. Or if you must mircog. I'm surprised how many apps don't care about root anymore. My bank app just warns me that my phone is rooted. Only some care about microg but I haven't found any except for android auto that I care about.
Other than smashing your phone. There are options to turn off anything you can! Be as manual and customized as possible.

i have rooted many and done full flashes of different roms , to get started i followed some easy online steps , i have never bricked any of my phones, its a good way to get rid of spyware and junk if you can find a good vetted rom for your specific phone, it might be possible to shut off the 5G by loading older modem files, not positive on that, it would be experimental , also rooting and flashing kills your warranty
Your phone is a small tablet computer. If you "root" your phone it means you basically reinstall a clean operating system while giving yourself root (admin) access within that OS. Therefore, you gain complete control over your device... or at least more control than you had originally.
The makers of the phones really do not want you to do this, since they have all kinds of crap installed on the phone that is for their benefit, not yours.
The best option is to buy a phone with an open source operating system that was designed to give you admin access in the first place... which is what I myself am waiting for.

Quiz what? Rooted every device I've ever owned for 10+ years. Being a dev for 10+ maybe give advice instead of saying "don't do it, it will break".
