This is strange grounds, as it's not only treading on civil rights, but HIPAA laws as well, for example, I have an autoimmune condition called Guillaine Barre, in remission I'm okay, but a flu shot could leave me paralyzed and on a ventilator due to relapse, my doctor told me I was lucky, and to never get another flu shot again, Guillaine Barre is listed in the top 5 side effects for the covid 19, so I can't get one, I am medically exempt, so I'm pretty sure I could sue over getting fired for refusing.
You should look into reporting your condition to employer with regards to the ADA. I believe that employers are only forbidden from medical discrimination if the appropriate forms have been filled out.

Yes, that where I was going with the HIPAA thing, it violates a lot of laws in place ImO, though I'm not an attorney.
