Jews that have converted to Christianity are Christians or Messianic Jews, but they are still ethnically Jewish.
Considering the influx of Russian Jews to the US, who fled due to persecution, during the last couple centuries (my great grandparents included), I think this has more to due with an exodus than religious conversion.
There aren't that many Jews left in Europe, except for the select few who own it.
