Someone in my family replaced their old iPhone 7 with a 12, against my advice. Interestingly, there’s a toggle to turn on/off 5G.
Anyone with experience: Is the ‘off’ toggle trustworthy? Is there a way to check the true status of the frequency in our home?

Don't have access to an i12, but my understanding is that switching from 5G to LTE mode under Voice and Data does force it to operate in 4G mode, to work on 4G LTE networks.
You can also leave it in the car at night or keep it in a metal enclosure, or at least switch to airplane mode (although gps updates can still periodically occur).

Technically, your microwave is a faraday cage. You could put your phones in there.
