I used to chef. When Quiznos came online they had AMAZING sandwiches. Their most popular one was their chicken sandwich. It was put into their oven, rolled along and out came a toasty sandwich with melted cheese, sauce. So damn good.
They got really popular and had massive lines out the door. But the chicken sandwich took too long to cook and they needed to speed up that line. They started warming the chicken in a water bath. Placed it onto the bread, ran it through the oven quicker. It was a soggy nasty mess. It went from the best damned thing ever to meh.
The other sandwiches sort of held up the company for a bit. The chicken sandwich was too popular though. People pivoted away from them. It was like they cut off their own leg and bleed to death.
2009 it would take 20 minutes to get into a store, 2010 you could walk right in at noon and be at the front of the line. I would go in try to order the chicken with out wet, sorry can't do it. Would grab another sandwich. I went from 2 to 3 times per week, to once a month, to who cares and never really went back.
Interesting. I loved quiznos also. It sounds like their business model suffered a bit from consumer expectations. It sounds like management tried to copy people's familiarity with the subway model of fast assembly of sandwiches to go. The panera model sets different expectations where customers are used to waiting for a proper hot sandwich and most customers dine in.
I don't remember our local quiznos having a comfortable dine in atmosphere. It was pretty stark, like a subway model and most people ordered them to go. I guess their great sandwiches came out too early without the restaurant format necessary to support it.
Yeah, Quiz was always sort of a fast food vibe, but with amazing sandwiches. If they have left everything alone it would have been fine. People adjust to long lines and will time out their lunch. I have seen that with popular food trucks.
