I ran straight water through my def system for months with nothing breaking. But that was 10 years ago, the system might be different now

No can do anymore. There is a quality sensor that detects the amount of water/urea in the tank. If that's off, error code and limp home mode is soon after. This is a US requirement, I don't know if other countries have this sensor or not.

Maybe there's a way to trick the sensor, like putting a hot water bottle on the cab temp sensor so the truck can be idled
