I am working toward a keto diet. You can eat leafy vegetables, tomatoes, and a few others. Also, you can eat all the meat and dairy items, except for ice cream with sugar in it. One of my favorites for breakfast is to layer sliced ham and cheese in a plate and microwave it till the cheese melts. Then scramble 2 or 3 eggs and spread on top of the ham. It's filling and keto.
What hurts is that keto is expensive. Most of the bad foods are cheap, such as bread, pasta, rice, and sweets.
I have considered that. I do have some quinoa, but haven't tried it yet. There is a book that was recommended to me a year or two ago that was very interesting.

Einkorn flour is what I use and it has never been altered. Highly recommend researching bc its wonderful
