This is the foundational principle of the scientific method. Anyone who sells science as truth is not only lying, they are telling you the exact opposite of what science intends to be.

We use science to create models that account for some subset of observations. It is essential to always keep in mind these are models. they are not truth. When we make an observation that the model did not predict, we use science to create better models. That is all science is; the process of creating iteratively better models that predict the outcome of future observations within some prespecified regime.

Some of our models are really good at that and we falsely create dogma from repeated good predictions. This dogma is not a part of science, but a part of the humans need to create dogma. However, this dogma is very often mistakenly conflated with science, and this is where the problems with science stem.

If a person spews dogma as science, they are not speaking from science, but from religion. All statements of "Follow the science" are correctly translated to "Follow my religion."
