No other building, to my knowledge, has ever been hit by something the size of a fully loaded 737 at speed either.

Steel retains much of its strength up until around 600 degrees. From there it gradually loses strength, where at 1100 degrees it's strength is roughly halved. This doesn't take into account the quality of the steel either. The chemical impurities. You will see a skeletonized building after a fire, assuming its supporting structure is intact, that's not in dispute. But that's not the case here.

You're overlooking the weight above, still pressing down on the weakend area. The outer columns of 7 nearest the towers were hit by debris, causing a weakening. That debris was on fire. You can find video of 7 almost fully engulfed in smoke on the back side from that view in the video, which suggests it wasn't a small fire, and that the building was damaged enough to fall in an asymmetrical way that its debris fell across Barclay st, and struck the white building behind it. You can listen to the firefighter audio about trying to put the fires out, but losing water pressure. And the penthouse was the catalyst for the collapse. Unless you're suggesting the FDNY was in on the plan too?

Again, there was still a number of floors and the massive 6ft thick solid concrete and steel roof of the towers that weakend support structure had to contend with. A fire doesn't have to melt beams, just weaken it enough that the weight above and gravity will do the rest. "Melting steel beams" is an oversimplification to overlook all the physics involved. Your thermite is comprised of iron oxide, in the form of the building's materials, and aluminum, in the form of a jet liner. And we haven't even fully touched on the resulting explosive reaction of water meeting molten aluminum.

The theory that teams of people coordinated to precisely plant thermite charges and cut beams, all while avoiding the firefighters and police in the area is hard to swallow. Harder still if it's suggested that the FDNY and NYPD were all involved too. The amount of people that would have been involved is staggering. I think its simply easier to state that the attacks were allowed to happen. The imagery alone, before the towers fell, was enough to get what they wanted. Whether the towers fell or not wouldn't make much difference. A surprise attack, people jumping out of those windows. It's enough to get people riled up or scared or both. Far easier too, given you'd have less people to contend with in the blackmailing and threatening.
