We don't.

Stop worrying about "what's real." Work on getting closer to the Truth through investigation and debate. I assert that NO ONE, (at least no one I know or have ever spoken with in my entire life) knows what the Truth is. That's OK. Why do we need to know? Why is that so important?

The Truth speaks to us, all day long, every day. You won't find it in anyone's words, or any book, or any TV show (LOL). But if you learn to listen, you can hear it speak to you. You may not be able to explain to others what it is telling you, but it doesn't mean you can't experience it.

The trick is, you can't listen when you are talking. Our constant narrative that we overlay on Reality when we run around trying to define it, and tell everyone else our "truth", is not the Truth. The Truth IS What IT IS. Our words can't express it. Our language isn't equipped for that. Accept that, and all your stress about "what's real" goes away.

If you keep your mind open, you can always look at new evidence in earnest. If you start spouting "truth," or believing someone else's "truth," you will cease to be able to listen to what it has to say, or see evidence contrary to your beliefs. The evidence is all. When you can't see it, because it doesn't align with your beliefs of "reality" at the moment, you cease to be an investigator, and become an indoctrinator(ed).

Just let the Truth be what it is, and listen to what it has to say. The process of learning to listen, of learning how to stop overlaying our narrative is a fundamental part of the path on the GA. (In some religions or philosophical practices they call this "listening without narrative" meditation.)
