I suggest OpenTCL and connect to your nearest server manually look at the city list pick a few and run a speed test to find the fastest. its a little work but once you get the settings right you know how to troubleshoot when it happens again.

I will definitely say that with the intro of the M1 Macs the Nord vpn service has gone from 8/10 to 2/10 im having so many issues on a daily basis its sad, I'm locked into a 3yr deal but proton vpn offers a decent free version. When my time is up with Nord im never coming back.
