Cooking corner:
Mix the following:
- a big tin of chickpeas
- a medium tin of artichoke bottoms
- half an organic lemon (with skin)
- 3-4 garlic cloves
- Olive oil (depending on the desired thickness
- eventual more lemon juice and salt (to taste)
- fresh basil
Artichoke gives a wonderful lightness to this hummus. Ideal with fresh bits of vegetables… maybe also some fruits (apple…).
I happened to buy a a caddie of chickpeas given how they tend to disappear from our supermarket because of muh Ukraine & Globohomo warming…
