First, make sure you have some means to keep your bills paid. Since you're aiming for mental health, maybe take a customer facing role in retail or hospitality, where you can interact and observe people as your "clients". It seems every critical service and industry is suffering some kind of staffing issue, especially the independent businesses. Most industries outside of healthcare or big corporate bodies will tend not ask or pry into your vaccine status, or that might ask and handwave it, and say it's okay.

Health industries tend to come under greater scrutiny, so you'd have to sniff contacts out who are willing to look the other way with great persistence. Even if you're dead-set on that industry, the non-vaccinated opportunities are tough to find there, and are likely not openly advertised as "not asking for vaccine status". Smaller practices will be more open to taking you on, whereas big-name companies will be more likely programmed to follow the regulations--so, look for opportunities in the small players, and be open to befriending them first. When making contacts, you should be forthcoming about your status, but more importantly let them like you as a real and friendly human being.

This is definitely not easy, thus I give my advice that you get some kind of job to maintain an income, because that search process will take time.

Finally, pray to the Lord, trust him, and sincerely. He will surely provide for you if you ask, and if you are willing to follow whatever crazy instruction and direction he has for you. It may not even be the job you wanted at first, but a job he will certainly ask you to do.
