I have sometime been asked what I eat with my keto buns.
Salty butter is fine, but then, you may want to try a homemade pesto. For this, use a small blender to shred together:
- some blendable leaves or dried fruit/vegetable
- as much nuts
- oil
- optional: parmesan, pepper, spices…
For example, here’s my latest pesto:
- 100g wild garlic leaves (it comes only one week a year in my supermarket).
- 100g walnuts
- olive oil
- optional: salt (adjust to taste), peanut butter (one large spoon of)
As long as there’s enough fat to cover the pesto, you can keep it for quite a long time as fat will prevent its exposure to oxygen (oxydation).
Pestoes can be spread onto bread, mixed with pasta, mixed with a pizza’s tomato sauce, it can also be used to flavor a strung rolled roast…
Here are a few other ideas:
- dried tomatoes
- grilled almonds
- oil
Or:
- basilic
- parmesan
- macadamia nut
- oil
Or:
- dried peppers
- garlic
- oil
Or:
- dried ginger
- lemon peel
- dried coconut
- coconut virgin oil
Or:
- dried apple slices
- walnut
- mustard seeds
- oil
Finally, a really basic one that shall make your steamed roots taste like heaven:
- garlic
- parsley
- grilled hazelnut
- butter
Fat inhibits the capsaicin so greased peppers burn less. If you are agonizing after trying Dave’s insanity sauce, DO NOT SWALLOW & DO NOT DRINK WATER! It will dilute the capsaicin which then will burn your esophagus and stomach. Take a nice spoon of butter or oil and let it melt in your mouth.
