You have to choose Republican or Democrat because Texas is one of those stupid open primary states where the opposition can come out and choose the weaker candidate for their guy to run against in the election.
In an open primary it doesn't matter what party you are registered under. If you decide to vote in the other party's primary there is nothing stopping you from declaring you want to vote in that primary. In my opinion that is about the dumbest damned way for a party to conduct their selection process that has ever been rigged up, but it can serve the cabal very well when they mobilize their sheeple.
