We are in 7b (northern Utah). I started greens indoors around first week of August, a few weeks ago started setting them outdoors to harden. Have already done massive amounts of lettuce harvesting.

Winter Choi

Champion Collards

January King Cabbage

Landis Winter Lettuce

Brown Dutch Lettuce

Winter Supreme Lettuce

Winder Wunder Lettuce

Prickly Spinach

Everything from Brown Dutch down were among Thomas Jefferson's winter favorites.

My carrots were planted last week of July when we were blessed with a temporary dip in temps. Tried starting beets and turnips indoors but most did not take the transplant well. This is my first real attempt to grow winter vegetables.

In addition, I recently got cool LED bulbs for my grow light contraptions. At this point I think I can grow lettuce all winter long indoors.
