Cattle are mostly raised on land that is unsuitable for other forms of food production. Any carbon footprint caused by cattle is nearly 90% offset by vegetarian foods that would assumable take beef's place in our diets and they cannot be grown in any large scale manner on the land currently used for beef production. The whole climate argument is easily dispelled using actual numbers and not emotions. Carbon dioxide accounts for .04% of the Earth's atmosphere. Man-made CO2 accounts for 3% of the carbon dioxide in Earth's atmosphere or 0.0012% of the atmosphere, beef production is a very small percentage of the already low percentage of man-made CO2 levels in the atmosphere. You could theoretically quadruple beef production and not move it's environmental impact, as measured in CO2 in the Earth's atmosphere by 1/10 of 1%.

Beef is a good source of protein, low in estrogen when compared to vegan sources of protein, and is mostly raised by small family owned businesses that are passed down from one generation to the next - those are the reasons for the war on beef. Their tactic is to make consuming beef seem like a guilty pleasure and a luxury item, thereby reducing the market availability to "the common man" and in turn driving small businesses off their lands by making their business model unprofitable.
