With a supply of food and time, IMO most people could get a simple farm running from reading a textbook. The problem is actually HAVING food to have time learn how. When the modern system breaks down, the grocery stores go bare in 36 hours. In 3 weeks most people will be out of food stores in their homes. 2 weeks after that most people will start getting desperate and extremely violent in their search for food.
