SHTF Butter. This is already my personal preference.

Ingredients: Refined coconut oil, good vinegar, some type milk /dry milk reconstituted, liquid oil, salt.

Because of all the health benefits of coconut oil I have started making 'butter' with it. It just takes a few minutes and the flavor seems the same. Basically you melt some refined coconut oil and add it to some 'milk' curdled with good vinegar and salt. You can adjust the hardness with a little liquid oil so it stays softer in the fridge. There are emulsifying stabilizers that can be included but I don't use them. You have to give it a few strong stirs to keep it from separating as it sets up.
