I went vegan for 6 months for health reasons and did just fine, but it required a lot of variety and a lot of research.

As far as the graphic goes-

Hummus is made of chickpeas and has plenty of B6.

Sweet potatoes and carrots cover Vitamin A needs.

Vitamin K2 is found in fermented foods in high concentrations. Natto, miso, sauerkraut, kimchi, and tempeh provide all one needs.

Almonds, walnuts, flax, pumpkin and chia seeds are all good sources of Vitamin F. I used to make a homemade pecan/almond/walnut butter which I added to pasta sauces and soups.

CLA can be obtained from sunflower or safflower oil.

Your body can create carnitine, carnosine, taurine, and other amino acids, just like the animals most people obtain them from.

CoQ10 is in olive oil, and many seeds and nuts.

Vegans who don't eat nuts and seeds will definitely have problems meeting their needs for many nutrients.

I love steak and chicken and eat it again, but largely eliminated processed foods and replaced with vegetables. I'm no longer a pre-diabetic and am glad I went vegan short term.

Edit- I still eat lots of vegetables along with eggs, cheese, and 3-5 servings of beef/chicken each week.
