Your problem is that you assume because the Genesis 2-3 text narrows in on consuming the trees of the garden, that therefore that's all that was given to be eaten. Logical fallacy. Clearly the reaon for the focus on vegation is because that is where the specific prohibition was categorized: do not eat of a tree rather than say a species of animal.
Also Adam was given dominion to name the animals under his authority, both livestock and wild animals. As if mankind who by design is an omnivore, with a big brain requiring the nutritional contents of muscle meats, organ meats, fats, etc was intended to only stare at the beauty and song of those fatty meat beasts walking around on all fours.
