Follow up from Sunday's cooking question!

The cupcakes came out delish, although not as I envisioned. Cooking icing does not work! After some thinking I put a couple scoops of the icing in a plastic food storage container and flattened it out and froze it thinking I'd use a miniature Tupperware bowl I have to cut out rounds to put in each cupcake prior to cooking. Psh, they were sticking to the bottom of the container so I used a squared off spoon and cut out squares. In the cake mix, instead of water I used Almond Breeze extra creamy being my nephew is lactose intolerant. I didn't try one being no where near allowable on my carnivore diet, but all said were really good. The internal icing more or less melted into the bottom of the cupcake with only a couple having gone through the bottom, and some it erupted out the top. I also made a mini loaf with the left over batter. Further down is a link with out of the oven and iced pics.

So the country fried corn steaks came out awesome IMO, and everyone that tried them's opinion as well. I took some cube steaks, precooked them in the oven, skewered them and refrigerated. Mixed up a box of Jiffy cornbread muffin mix, made some white gravy and heated canola oil in a wok. I cooked one at a time, taking a skewered steak, dipping it into the "batter" then dipped it into the hot oil for a couple seconds to set the batter then slid off the skewer. After a few seconds I flipped it, then took it out and dripped off excess oil. I did try one of these however, I LOVE me some country fried steak & gravy and biscuits & gravy!! After having 0 carbs for more than a month, I could tell I'd ingested something my stomach wasn't used to lol

The cupcakes I probably won't try again, but if I do the center will be a different cake instead of an icing. The country fried cornsteaks will definitely be tried again, but next time I'll cut the steaks into bite size pieces to batter/fry and cook a few strips of bacon for both making the gravy and crumbling into it for dipping.
