My Vietnamese lady friend introduced me to these crepes that are made with like these little yellow lentil things ("What are these called specifically?" "We just call them 'yellow beans'.") and some other kind of flour or something, and you put various crud in them while cooking, then wrap them in lettuce/various crap, dip them in sauce etc. Sooooo good. We'll have to do this one again so I can make some notes but you might google around and be able to find 'em.
