I haven't seen "pine cone = pineal" until recently, so the idea that this is "New Age" bullshit is very possible. But the pine cone does seem to lend itself to being a pagan symbol (à la The Green Man) of fertility, power, rebirth, etc. Something along those lines.
I agree with you that the "Christmas Tree" is really a celebration of Norse/Germanic traditions/pagan beliefs, aligning to The Green Man, etc.
The Eye of Horus you posted is to my knowledge a diagram of the brain in cross-section, showing the location of the pineal grand, etc. Interested to see if you would agree with that.
The Catholic Church seems to have taken a variety of belief systems and made a pastiche that could be "all things to everyone". Mithrism, Green Man, Inanna/Eostre stuff for Easter, etc.
