Just because a wavelength is millimeters in length does not mean that it is dangerous (or at least not very dangerous). It depends on if that EMF is ionizing radiation or not.

Non-ionizing (or non-ionizing) radiation refers to any type of electromagnetic radiation that does not carry enough energy per quantum (photon energy) to ionize atoms or molecules—that is, to completely remove an electron from an atom or molecule.[1] Instead of producing charged ions when passing through matter, non-ionizing electromagnetic radiation has sufficient energy only for excitation.

Instead, the frequency selected allows energy to penetrate deeper into the heated food. The frequency of a household microwave oven is 2.45 GHz, while the frequency for optimal absorbency by water is around 10 GHz.
