Honestly, ive had friends offer me free smartphones they have in the drawer at home because they feel sorry for me lol, they cant understand Its by choice... I was a Gadget man all my life, but backwards is the way forwards now brother ;)
Fun fact, phones w/o SIM cards can still dial 911. As long as that radio is in your phone it can dial out and some one else can probably dial in.
Also, that "phone your using as a camera" still is storing metric data (are you moving, how fast your moving, if GPS is on where your moving) as you walk around doing your daily life activities. Even if you don't ever use it to connect to the internet via WiFI or via WWAN (ie4g/5g cell radio) it is still saving that data on the phone. That is what it was designed to do. in the EULA "record data to improve usability" is a friendly way of saying "spy on you".
So here are my tips: Consider buying a small digital camera or two (one for the glove box). Consider switching to a feature phone(sometimes refered to as a dumb phone) instead of a smart phone.
Pinephone ($150) has switches that physically disconnect the modem, wifi, mic, cameras. It runs on linux so no google, microsoft, or apple stealing all your metadata.
