It's hard to know the exact reason for some of the slip-ups. I think the dementia is partially an act, partially true. And I suspect the partially true part is enhanced by stress and by pretending to be demented.
So the slip-ups could be stress induced - he's thinking about it and he can't help himself because of fear.
They could also be part of a plea bargain to save what's going to be left of the Biden dynasty. They are going down, and maybe the patriots told him that if he's going to play the dementia card, he needs to slip out some truths on a regular basis. That may allow some of the family a chance to survive this.

I think he is finding out that this "job" is harder than he thought. He isn't able to stand up under the stress.
