I saved just over a gallon of pressed crawfish juice, kept frozen, from our last big crawfish boil. Just a little goes a long way, but would make a great starter for a seafood sauce to go over the top of the alligator ravioli.
Trust me, if it CAN be eaten, people in Western Louisiana and Southeast Texas will eat it.
