Could be an option, but if I were a sound guy at that level with an unlimited budget and setup I'd use both. You can't control the wind, etc., and you sure as hell don't want to be responsible for saying "uhh we can't use this it sounds like shit."
Which is why they make foam covers to go over the mics. It eliminates wind noise. I have used these covers many times in outdoor concerts and events. After looking at the bulge in her boot I wondered if she was "Packing" a small pistol. You never know..
