Because they believe that the vital force of the child is within adrenochrome. They have a "vitalist" view of the world. If they eat a child they believe that they take the vitality, the essence of this child. Sick but logically consistent.

Very much like synthetic mescaline or psilocybin-it has a less organic feel to it evidenced by the trip. Unconnected to nature.
