Can't chemists already synthesise adrenachrome? Why wouldn't people just buy the synthetic stuff?

Because they believe that the vital force of the child is within adrenochrome. They have a "vitalist" view of the world. If they eat a child they believe that they take the vitality, the essence of this child. Sick but logically consistent.
