The biggest difference is that pringles processed the potatoes does more. Pringles is basically potato mash of rehydrated rough potato flour, while Stax is rehydrated potato flakes. The flakes are larger and not processed as finely, meaning that its slightly thicker, rougher, more durable, and most of all - doesn't absorb as much oil.
To compare use each chip to dip into a thicker nacho cheese sauce. The pringle will break more often, while the stax will hold.
