Degoogled Android phone OS https://e.foundation/products/

They sell the phone with it already installed or you can install it yourself if you have a compatible phone.

They don't support that many phones yet. LineageOS is de-Googled, because if you want Google, you have to download and intentionally install OpenGapps. https://download.lineageos.org/

Thanks. In the past I have simply used the pico or nano OpenGapps to save space and get the minimum.
