There are a number of these binding receptors. The vaccines are failing because they only target one receptor, but the virus does not always replicate itself perfectly, and variations eventually show up which have evolved to have a different shape in that target receptor. They proliferate in spite of the vaccines artificial antibodies and voila, the Greek alphabet of variants. The process is called evolutionary pressure and the vaccine developers are dumber than dirt to ignore it. However, the natural antibodies noticed and adapted to more binding sites.
