My idea was to start applying for companies that have a mandatory vaccine requirement. Then day of the interview cancel and say you got another job for their competitor that don't have mandatory vaccines LOL.

What a fascinating idea. Interview practice is great, and knowing what a cost centre and organizational time-sink actual screening of candidates to the point where interviews are being organised are.. this will certainly have an impact.
Not as great as an impact when key but vaxxed people at the company start dying, sure. But every bit helps to get the message through.
