Yeah... That's a bunch of really good points. If you want to make a stand and resist your municipal authorities, you have good principles. But the clerk won't care, and will happily tell you it won't get you out of jury dirty. If you don't show up, they'll do whatever they do to people who don't show up.
You'll have better luck if you just say you think you might have covid. And then refuse to get tested.
I talked to a girl at the Court house for a half hour today, politely. I honestly think she was on my side. I said, in your paper work, you say folks unwilling to wear the mask will be asked to leave. I asked if these individuals were documented as non compliant, I asked how you would follow up with said individuals. She told me, she hasn’t had one person at the NH court house refuse to wear a mask since August of 2020. I said… that’s one hell of a statistic for the “live free or die state”… I call bullshit, and I might be willing to test my theory.
I'd personally try that. It's both honest and non-compliant. And you're not lying when you say you're uncomfortable when you can't breathe freely. NH has been changing: more cities, more government, less wells.
I would send a short and simple email that says you will not wear a mask and ask them politely if they will accommodate you. I would not go into any details. You want them to respond to whether they will accept you maskless. It puts the ball in their court and they can decide if they want to escalate the situation or move on.

Seems to me that she told you 'this is how you get out, if you want it'..
If the courthouse is such a diseased and perilous environment that people there need to wear PPE, I wouldn't want to be there either.
