I told her that I was not comfortable discussing and she acted like I was the weird one. Then she started back pedaling and saying ohh I was just trying to find out who all is concerned. No that’s not what you were doing at all.

All bosses are not in favor of the vaccine nor the mandate. Many are trying to figure out how to deal with a situation they didn’t create, don’t support, and can’t change. Despite what some folks may think, firing people is not fun. Many are struggling with the same concerns the employees have in addition to the added burden of how to keep the operation going.
Just because cowards feel remorse is no reason for empathy.
Go on the offensive.
Let them know their behavior is deeply disappointing. You thought they were a good leader until they caved and participated in this clearly unethical and potentially illegal action.
I think he's saying it's easy to fire someone that deserves it.
Nope he's whiteknighting for the people with the authority to stand up for their employees but don't wanna get sacked for not sacking the underlings. There is very little to think about and struggle with. It's not legal. It's not binding. Unless you are relying on federal grants/contracts (which could go away if you don't dance to their tune obv) you have every right to run your business as you see fit.
