I would like to have something at the ready to send or show them right away to back up my statements about why they are on the wrong side of this. According to one of the HR people here, they are having a meeting today, with the legal team to decide what to do. According to her, there is a very large fine per unvaccinated employee for all companies. This is absolutely ridiculous. They are about to take food off my 3 kids' plates if they follow through with this.

This is good, but does it cover the fact that they're saying the FDA approved the vaccine? It doesn't seem to have anything in here that the approval was not a full approval.
It was fully approved for cormirnaty or however you spell it. The trick is the approved vaccine is not available anywhere, and won't be for a couple years. It's a bait and switch. The current Pfizer is still under eua. As soon as the approved one comes on the market, all eua authorizations are gone.
Is there any official place online that says that or similar? If I’m to argue that they’ll want proof.
It's a combination of the FDA doc approving Community, and the legal interpretation of exactly what that means. I don't think there is an official doc that explicitly says that.
I think Viva Barnes Law YouTube channel does a good explanation though.
