I see two choices here. The first is to jab or be fired and THAT is not a choice people should have to make. It is coercion and blackmail, as you say.
But imo there "is" a choice to comply. People can 1) make the decision to fight or 2) stay, take the jab, and accept that if things go awry it was their decision to go along with the policy, not the policy itself, that is to blame.l. I know it's not easy to start over in a job but people have been doing it since long before covid. If this is ever to end people have to stand up and say no
Our jobs have always been a big focus in our lives. Before there were jobs in the modern sense, we worked the land and/or hunted and that was a big focus of human life. Survival requires work to create or develop raw materials into resources that can sustain life.

And here we come to the idea, the realization, that our jobs have become the major focus of our lives. Sad times.
