The Spanish word "canibalis" did exist, but didn't mean someone who eats people. Also, the Caribs didn't eat people. I would assume the word spread in meaning, much as many other words have. People just called dark tribes cannibals, and then some turned out to actually eat people. We call American tribes Indians, when none of them came from India. So then we started having to say "India Indians" when we were talking about people from India.
Anyway, the video's story is fake news on that point, in spite of the other truths. Some people are bad about mixing truth and lies to make you think all of it's truth. I have seen countless examples of this type of stretching to prove false derivations. I say "stretching" just as Mark Twain used "stretchers" instead of "lies" in his books.
